Unlike store-bought versions loaded with additives, this farm-to-table chicken pot pie is packed with pasture-raised chicken, fresh vegetables, and a rich, creamy filling—all wrapped in a golden, flaky crust.

Chicken Pot Pie

Recipe.

    • 1 small onion, diced

    • 1 leek, finely sliced

    • 2 celery stalks, sliced

    • 1 garlic clove, minced

    • ¼ tsp ground thyme

    • 300g (about 2 cups) pasture-raised roast chicken, shredded

    • 1 cup frozen peas or corn or a mix of both

    • 300ml (1 ¼ cups) crème fraîche (or dairy-free alternative)

    • 250ml (1 cup) homemade chicken stock (add 50ml more if needed)

    • Salt and pepper, to taste

    • 1 pie crust (see my homemade crust recipe in a previous post)

    1. Sauté the Vegetables – In a cast iron skillet, melt a little butter or lard over medium heat. Add the onion, leek, celery, and garlic. Sprinkle in the thyme and a pinch of salt. Cover and sweat the vegetables until soft, about 5 minutes.

    2. Add the Chicken & Liquid – Stir in the shredded chicken, then pour in the chicken stock and crème fraîche. If making a dairy-free version, stir a tablespoon of flour into the vegetables before adding the stock to help thicken the filling.

    3. Simmer & Thicken – Bring the mixture to a gentle boil, stirring quickly as the sauce thickens. Adjust seasoning with salt and pepper. Remove from heat, stir in the frozen peas or corn and allow pie filling to cool slightly.

    4. Prepare the Pie – Roll out your pie crust and stretch it over the skillet, trimming any excess dough.

    5. Bake – Transfer the entire skillet to a preheated oven at 400°F (200°C) and bake for 20 minutes, or until the crust is golden brown.

    6. Serve & Enjoy – Let the pie cool for a few minutes before slicing. Serve with boiled new potatoes, creamy mashed potatoes, or steamed broccoli for a well-rounded, nourishing meal.

  • If you prefer a dairy-free version, leave out the creme fraiche and simply thicken the sauce by adding 1 tbsp flour. To do this, sprinkle the flour over the cooked onions and leeks just before adding the chicken stock.
